The Intellectual Technology Management Committee (ITMC) of ICAR-CTCRI has approved four novel tuber crop-based products/processes for licensing.
Two innovations, instant gelling cassava monostarch phosphate and food-grade thickening cassava distarch phosphate, are modified cassava starches with wide food industry applications. The monostarch forms a transparent gel without heating, ideal for fruit gels, clear sauces, instant desserts, and confectionery coatings. The distarch acts as a natural thickener for various food products.

A third product, a synbiotic ice cream made from orange and purple sweet potato, combines prebiotics and probiotics to boost gut health and antioxidant intake.

The fourth is a process to extract natural purple colourant from purple sweet potato leaves, available in powder, concentrate, and capsule forms, offering a safe alternative to synthetic dyes in food and cosmetics.
